Farm Market Recipe of The Week: Farm Style Caesar Salad

Duke Farms' Farmers Market is held every Thursday from 3-8pm. We are located at 1112 Dukes Parkway West, Hillsborough, NJ 08844 This week we are featuring eggs from Polnasek Poultry Farm. They are based in Hillsborough NJ and offer both pasture-raised chicken and eggs. Owner Tim Polnaseks reputation as a responsible farmer precedes him. He has done his best to set the bar high for both quality and fair pricing. Although most people are aware of the fact that Caesar dressing is made with raw egg yolks, few realize that this classic dressing gets its unique flavor from anchovies. For the oil in the recipe, we recommend using extra virgin olive oil from Patricia and Paul - Artisans of Fine Oils and Balsamic as well as the Organic curly kale from Harvest Moon Organic Farm.

Ingredients 1 garlic clove 2 large egg yolks 2 tablespoons fresh lemon juice 3/4 teaspoon Dijon mustard 1 jar white anchovy fillets (use 1TB of the liquid they are packed in) 1/2 cup extra virgin olive oil 3 tablespoons finely grated Parmesan Kosher salt Freshly ground black pepper

Preperation Mince garlic clove and add a pinch of kosher salt. Use the side of a knife blade to mash into a paste, then scrape into a medium bowl. Whisk in 2 large egg yolks, 2 tablespoons fresh lemon juice, and 3/4 teaspoon Dijon mustard. Whisk in liquid from anchovies. Start adding oil very slowly; dripping while whisking until dressing is thick and glossy. Whisk in 3 tablespoons finely grated Parmesan. Season with salt and pepper, and lemon juice to taste. My personal preference is to top the finished salad with shaved parmesan as well a couple of the white anchovies. *Raw egg is not recommended for infants, the elderly, pregnant women, and people with weakened immune systems.
