Recipes from Chef Josh: Kale Hummus Sandwich

This week’s recipe is another café favorite - the grilled kale & hummus sandwich. This vegan sandwich is simple, yet bursting with flavor. I hope the fact that it is vegan does not deter you. Personally I can’t imagine not eating animal products but I LOVE this sandwich! For me, a balanced diet is one filled with lots of vegetables accented by some meat and fish. Vegan dishes, such as this sandwich, offer a delicious meatless meal option.

A kale hummus sandwich sliced into triangles

Grilled Kale & Hummus:
2 slices multigrain bread, toasted
3 TB hummus, homemade or store-bought
3 TB *grilled kale
1/2 avocado, sliced
1 TB pickled red onion

1. Spread hummus evenly on both slices of bread.

2. Lay grilled kale evenly over both slices of bread.

3. Top one slice with pickled onions. Halve the avocado and gently slice in half (to the skin, not through). Using a spoon, scrape slices out all, lay on top of bread, and spread flat.

4. Assemble sandwich and cut in half. Enjoy!

*To grill kale, separate the leaves from the stem and roughly chop. Toss with a little olive oil, salt, and pepper. Place on a hot grill pan in a single layer and grill until charred. Cool to room temperature.
