Any day can be Taco Tuesday!
These shrimp tacos are both fast and easy. I would encourage you to make your own fresh salsa and guacamole—it’s so worth it. Best served with little arugula or spinach and salsa verde. In the event of your store running out of shrimp (or maybe you just don’t like them), substitute a fish of your choice or chicken.
Shrimp Tacos:
1 lb shrimp, peeled and deveined
1 pkg taco seasoning
Canola oil
8 soft taco shells
Baby arugula or spinach
Fresh salsa
Guacamole
Salsa verde
Sour creme (optional)
Preheat fry pan on high heat. Coat shrimp with taco seasoning. Add oil to thinly wet the bottom of the pan and add shrimp. Cook on high heat until done.
Fresh Salsa:
2 tomatoes, diced
2 TB red onion, minced
2 tsp cilantro, chopped
1/2 lime, zest, and juice
1 tsp apple cider vinegar
1 tsp olive oil
dash hot sauce

Guacamole:
1 avocado
TB red onion, minced
1 tsp cilantro, chopped
1/2 lime, zest, and juice
Dash of apple cider vinegar
Dash of Tabasco
