Recipes from Chef Josh: Summer Quinoa Salad

This Summer Quinoa Salad recipe is inspired by seasonal vegetables and herbs from the garden. This recipe does not have expensive or hard to find ingredients. It is simply a showcase for fresh vegetables from your garden or local farm. Ingredients for summer quinoa salad on a cutting boardSummer Quinoa Salad:

1 cup dry quinoa
2 cups water
1 tsp cumin
S+P
2 tomatoes, diced
1 avocado, diced
1/2 red onion, minced
3 handfuls arugula
1/2 bunch parsley
1/2 bunch cilantro
Olive oil
Apple cider vinegar

1. Heat quinoa, water, cumin, and S+P over on high until it simmers, then turn down to medium heat. Cook until tender and remove from heat. Cool until room temperature.

2. Chop all vegetables as noted. Thinly slice herbs. Toss all ingredients together with quinoa, arugula, oil, and vinegar. Check for seasoning one more time and serve.Finished summer quinoa salad on a blue plate
